When it comes to Indian cuisine, any chef will tell you that it’s all about the spices. Add too much and it will overpower the meal. Add too little and you lose the authentic flavor. Basically, if you take care of your spices and prepare them well, it will come out smoothly in your dish’s flavor.
During our cooking class with Mukti (of Mukti’s Kitchen), we learned one very valuable tip: always grind your own spices and buy them from the right vendors (not Trader Joe’s). Fry them a little bit on your pan before you need to use them in your dish to release the aromas and you’re good to go!
